When your baby decides that they absolutely NEED to have eggs for breakfast every morning, you start spending a lot of time thinking about new ways to make eggs. And by thinking, I mean doing some field research on Pinterest. Sure you can scramble. And of course there’s the frittata, perfect for little fingers to hold. But after a while you need to change it up. You need to get some new egg ideas in there. One can only eat so many scrambled eggs. Even with different mix-ins, they’re still scrambled eggs. That’s why for this week’s meal plan, I’m bringing you 7 NEW Ways to Make Eggs for Breakfast, as discovered on Pinterest.

Besides saving money, one of the main reasons I create dinner meal plans is because it makes life more exciting. Yes, you heard me. Making new dinners makes my life more exciting. But seriously. There’s something incredibly soul-satisfying about picking a new recipe, cooking from scratch, and tasting the results. Perhaps that’s why I may or may not be a cookbook hoarder (more on that later).

So you’ve seen my dinner meal plans, and my lunch meal plan. Now it’s time for some fresh ideas to change up breakfast.

As always, don’t feel that you need to make everything. And definitely don’t feel that you need to make eggs every day. I’m sure (hoping) like most things with kids, it’s just a phase. Today we had oatmeal – a step in a different direction, people (to be clear, Harper will eat anything, she just likes to have eggs in addition to whatever else she’s eating at breakfast). So pick one or two things to add to your usual rotation and see how excited your little one gets to try something new!

If you did want to choose more than one of these recipes to make in the same week, the good news is that some of them have similar ingredients in common (besides eggs). A few of the recipes use freezer staples such as: English muffins, bacon, and tortillas and fridge staples like cheese, spinach, and broccoli. Time to get cooking!
