Crazy Easy 3 Ingredient Slow Cooker Dinner Recipes

I’m sorry, did I just say 3 ingredients? Yes, yes I did. But that’s crazy, you can’t make anything with just 3 simple ingredients! On the contrary, dear reader. We most definitely can. Not only will these 3 ingredient dinners be easy, fast and utterly delicious, they can also be made in the slow cooker. HOLD THE PHONES. Ya heard right. Set it and forget it, friends. I’m dying a little on the inside just thinking about how embarrassingly easy these dinners will be to make. No more waiting, let’s get cooking.

 

3 Ingredient Slow Cooker BBQ Chicken

Ingredients:

1 Bottle BBQ Sauce (we like Dinosaur BBQ)

1 lb Boneless Skinless Chicken Thighs or Breasts

Buns, for serving (we like potato rolls, yum!)

Instructions:

Add chicken to slow cooker and pour sauce over top, turning to coat. Cook 4-6 hours on high for breasts, or 6 hours on low for thighs. Serve with buns!

2-Ingredient Instant Upgrade: Shredded Cabbage + Mayo

 

Vegetarian/Vegan Option: BBQ Tempeh

Ingredients:

2 Packages LightLife Tempeh (can be found at Whole Foods, TJs, or most major grocery stores)

1 Bottle BBQ Sauce (we like Dinosaur BBQ)

Buns, for serving

Instructions:

Cube tempeh into large squares. Marinate in BBQ sauce in fridge for 2 hours (overnight is even better). Preheat oven to 425 F. Lightly spray rimmed baking sheet with cooking spray. Lay marinated tempeh in single layer. Cook for 15 minutes, then add more sauce, toss and cook 15 minutes more. We like our tempeh slightly soft but still firm with a bite.

3 Ingredient Slow Cooker Buffalo Chicken

Ingredients

1 cup Frank’s Hot Sauce (or more to taste)

4 Tablespoons butter (or less depending on desired heat level)

1 lb Boneless Skinless Chicken Thighs or Breasts

Instructions:

Add chicken to slow cooker and pour sauce over top, turning to coat. Cook 4-6 hours on high for breasts, or 6 hours on low for thighs.

2 Ingredient Instant Upgrade: Buns + Celery for serving

 

Vegetarian/Vegan Option: Buffalo Tempeh

Ingredients

1 cup Frank’s Hot Sauce (or more to taste)

4 Tablespoons butter (or Earth Balance for vegan)

2 Packages LightLife Tempeh (can be found at Whole Foods, TJs, or most major grocery stores)

Instructions

Follow same instructions for BBQ Tempeh above

3 Ingredient Slow Cooker Shredded Salsa Chicken

Ingredients

1 Tub Fresh Salsa (about 14 oz)

2 Teaspoons Ground Cumin

1 lb Boneless Skinless Chicken Thighs or Breasts

Instructions

Mix cumin into salsa. Add chicken to slow cooker and pour salsa over top, turning to coat. Cook 4-6 hours on high for breasts, or 6 hours on low for thighs.

2 Ingredient Instant Upgrade: Fresh Cilantro + Taco Shells

Vegetarian/Vegan Option: Use store-bought “chicken strips” such as Tofurky or LightLife Brand and follow cooking directions on package for stovetop. Add salsa and simmer the last few minutes of cooking.
