Kid-Friendly Taco Meat

My go-to one pan recipe I've been making for years! Mild enough for kids, perfect in tacos, bowls, with chips or just with rice!

Ingredients
 

  • 2 tbsp olive oil (extra virgin)
  • ¼ cup red bell pepper (finely chopped)
  • 1 lb ground turkey (or sub ground chicken or beef)
  • 2 tbsp taco seasoning
  • 1 can pinto beans (drained and rinsed)
  • 1 can tomato sauce (plain tomato sauce, 8 oz can)

Instructions
 

  • Warm the olive oil in a high-sided skillet over medium heat
  • Add the chopped bell pepper and stir
  • Add the ground meat, breaking it up with a wooden spoon
  • Sprinkle with taco seasoning and mix everything together
  • Continue to cook until the meat is browned
  • Pour in the pinto beans and tomato sauce and mix
  • Fill the tomato sauce can with water and pour into the skillet
  • Mix everything together and simmer on medium-low for about 10-15 minutes
  • Taste and adjust seasonings as needed
  • Serve right away in tacos, rice bowls or as nachos, or store in a glass container for later!

Notes

  • This recipe is very kid-friendly as it's mild and doesn't have a lot of "stuff" in it :)
  • You can of course leave out the bell pepper and the beans if those are a no-go!
  • Sub in black beans, add chopped onion with the bell pepper - the recipe is really flexible!
  • This also freezes really well - just reheat in a skillet with a little bit of water or chicken stock.
