Mini Waffle Omelets (BLW & Toddler)

Your new favorite way to make eggs: in your mini waffle maker! Great for baby-led weaning, easy toddler breakfasts, and make-ahead meal prep breakfasts.

Ingredients
 

  • 4 large eggs
  • 2 tbsp milk (any kind)
  • ¼ cup cheddar cheese (finely shredded)
  • ¼ cup broccoli (finely chopped)
  • salt and pepper (to taste)
  • nonstick spray (I like Chosen Foods)

Instructions
 

  • Mix the eggs and milk together in a liquid measuring cup (with a pour spout)
  • Add the shredded cheddar cheese and chopped broccoli
  • Mix until combined
  • Add salt & pepper (omit for baby)
  • Plug in your mini waffle maker (when the blue light turns off, it's ready!)
  • Spray with nonstick spray (I like Chosen Foods)
  • Pour in just enough mixture to coat the bottom of the waffle maker (not too much or it will overflow)
  • Cook for about 30 seconds!
  • Carefully remove to a plate or cooling rack with a nonstick spatula
  • Continue with the rest of the mixture

Notes

  • If you're unsure if the egg waffle is ready, gently poke with a fork and see if the inside is still liquid-y at all
  • If it needs more time, just close the lid for a few seconds
  • These cook very quickly - so keep an eye on them!
  • When you first open the lid, the waffle egg will shrink, this is normal! 
  • Note on broccoli: I've tried this recipe with leftover roasted broccoli, fresh, and frozen - it worked great each time!
