I would consider myself a pretty money-conscious person (except where Target is concerned). But if I go to the store without a meal plan, it’s all over. I know you know this struggle. It’s like that old adage: never go food shopping on an empty stomach. How about, never go food shopping without a meal plan? Not only does this help save money, it’s also a safe bet that food won’t go to waste. How many times have you bought something (not on your list) only for it to rot in the fridge? I’m gonna go with one too many. We’ve all been there. Sometimes, I, too, resist the BOGO if something is not on my list.
Because you know I like to keep things organized and I wish my planners had planners, I bought this neat meal planning book at Michael’s with a coupon for $2.99 (pictured below). It has lots of fun little features and (bonus!) has pre-set holes to snap right into a planner. YES. I couldn’t find it online to link in this post, but if you have The Happy Planner, you can buy this meal planning insert for it. DOUBLE YES.
I also keep this notepad on my fridge so when I’m in the kitchen and I realize I’m out of something, I can immediately write it on the pad before it gets lost somewhere in the depths of my mommy brain.
On to the menu! As always, we’re keeping it seasonal with fresh basil, tomatoes, and baby spinach. Our basil plant is not nearly as out of control as our sage, but it’s doing its thing. This week also boasts multiple uses of chicken and salmon (which you can get fresh or frozen), quinoa, and mozzarella cheese.
Notes about Week 4’s Menu: the caprese pizza was SO GOOD we ended up making it 2 nights in a row. Harper also continued to eat her pizza on the dogs’ bedtime walk and in the bath. So, yeah, enough said.
