Let’s kick off the new year with this fun weekly meal prep challenge! A simple way to feel more organized and eat healthy this year.
New year, new challenge!
Back in October we did a Community Crockpot Challenge (in my IG stories) and it was so fun to see everyone participating and cooking week by week.
You know we love a good challenge around here and this has to be the perfect one to try in January – besides decluttering, of course ๐

- For this series, Iโve collected recipes that can be made in a muffin pan (but not necessarily just muffins).
- And donโt worry, Iโve linked my favorites if youโre in need of an upgrade (hello, silicone pans!!)
- Since this is a Meal Prep challenge weโre going to make 2 recipes per week on Sundays: one sweet, one savory.
- The goal with this challenge is to have easy, healthy options ready-made, and even extra to freeze if you double the recipes!

This page is going to serve as the โhomeโ for the recipes and ideas so you can keep coming back to it each week to participate in that weekโs Muffin Pan Meal Prep Challenge.
The Challenge
- Weโre going to try two recipes per week
- The recipe for the week will be shared on Friday in my IG stories
- Then weโll make the recipe together on Sunday in my stories!
- Afterwards Iโll poll everyone for their feedback/rating on each recipe weโve tried!

The Tools
- Below you’ll find the different muffin pans Iโll be using for this challenge
- I prefer using silicone, as everything pops out easily, without the need for oil or paper liners

The Recipes
These are all recipes I have tried and that my family loves!
After we cook each recipe I will add your thoughts and reviews below as well!
Week 1
Sweet: Baked Oatmeal Cups from Because I Said So, Baby
Savory: Cottage Cheese Egg Bites from Two Peas and Their Pod

Week 2
Sweet: Banana Chocolate Muffins (with spinach) from Lemons & Zest

Savory: Broccoli & Cheese Egg Bites* from Because I Said So, Baby

*this recipe shows you how to make it in a mini waffle maker, however you can also make this in a mini muffin pan using the exact recipe.
- Follow the recipe as listed
- Pour mixture evenly into a mini silicone muffin pan
- Bake at 375 F for 10 minutes or until cooked through
- Pop out and serve right away or cool egg cups and refrigerate/freeze for later
Week 3
Sweet: Mini Blueberry Muffins from Cookie & Kate

Savory: Sausage & Cheese Egg Muffins from Wholesome Yum

Week 4
Sweet: No-Bake Chocolate PB Oat Bars from Rachel Mansfield

Savory: Mini Turkey Meatloaves from Skinnytaste

These are the recipes that I am going to cook from, but feel free to use whatever recipes you love and if you try a different recipe from whatโs listed here, please let me know how it comes out (you can leave a comment here or DM me on Instagram).
Dietary Substitutions
Most of you guys already know that one of my kidโs is on a gluten-free diet and my husband is lactose intolerant so I always have to keep that in mind when Iโm choosing recipes and cooking.
Gluten-free: Iโve had a lot of success using Bobโs Red Mill and King Arthur Flour 1:1 gluten-free flour blends in different recipes. Weโve also recently experimented with Einkorn flour (not completely GF but very โlowโ on the scale) and our daughter seems to do well with that!
Dairy-free: In recipes that call for milk I either use almond milk or full-fat coconut milk.

So excited for this Muffin Pan Meal Prep Challenge and I canโt wait to see what everybody makes and how everything comes out!
