Week 2 features some of summer’s best and also some of my favorites: zucchini, fresh corn, avocado, and ripe tomatoes as well as some easy pantry staples like black beans and rice.
After last week’s post, I realized that I failed to mention that this dinner plan feeds all 3 of us: Me, Eric AND Harper. Some readers messaged me to ask if I make Harper a separate dinner, and the answer is: ain’t nobody got time for that. Harper is a little foodie-in-training. She is currently crushing on: shrimp, cherry tomatoes, asian flavors, and pasta (who isn’t?). When we sit down for meals, I just take a scoop off of my plate (tastes better when it’s from mom or dad’s plate, obv) and put it on her ezpz. ← you need one of these in your life ASAP.
