Week 3! Week 2 was a big hit and I’m really thinking you guys are gonna dig Week 3 as well. This week’s Pinterest-inspired meal plan is full of global flavors – which is exactly how we like to eat. I mean, I could probably eat Mexican food all day everyday, but you know, carbs.
You may have noticed that my meal plans don’t include recipes with red meat and that’s because I don’t eat red meat or pork. That’s right. I’m the one person on the planet who doesn’t eat bacon (does turkey bacon count?). Eric on the other hand loves himself a good burger, but for us, there’s no point in making red meat for dinner if only one of us is eating it.
Now funny enough, Eric is also lactose-intolerant. This is funny because I LOVE CHEESE. This is also funny because I used to be a vegan. Anyways, when recipes call for shredded cheese, Daiya is my go-to dairy-free choice for Eric’s half of the meal. Another favorite brand I recently discovered at Whole Foods is Green Valley Organics. They make seriously delicious lactose-free sour cream, cream cheese, and yogurt without any extra additives. This obviously works if you’re lactose-intolerant, if you’re vegan, there are a ton of other good brands at Whole Foods.
As I mentioned in Week 1, I save time and money by picking recipes that use similar ingredients, or recipes where I can easily swap out ingredients to use what I already have. This week features multiple uses of bell peppers, zucchini, carrots, cilantro, romaine lettuce, and pantry/freezer staples such as black beans, brown rice, and naan bread (mmm…naan bread).

Fri: Chopped Thai Salad with Romaine Lettuce and Grilled Shrimp
Sat: Chicken Satay Naan with Romaine Lettuce and Grilled Zucchini
Sunday: Turkey-Stuffed Peppers with Brown Rice

If you’re worried about jerk seasoning for your little one you could try a lemon – pepper wing instead. Oil the wing squeeze & zest of lemon and some cracked black pepper. Hit it again when you open the packet. Truly delicious and our bun went crazy for them!
The lemon-pepper wings were also a big hit with the grown-ups as well!
