As much as I like to complain about being too hot and/or summer flying by too quickly, I actually truly enjoy summer and all of the amazing foods that are in season right now. I think I actually wait all year just for that first bite of a fresh summer peach.

Week 2 of my One Month of Easy Dinners meal plan features some of summer’s best and also some of my favorites:
- zucchini
- fresh corn
- avocado
- ripe tomatoes
As well as some easy pantry staples like black beans and rice.

After last week’s post, I realized that I failed to mention that these dinner plans feed all 3 of us: Me, Eric and our one year old.
A reader messaged me to ask if I make our toddler a separate dinner, and the answer is: ain’t nobody got time for that. Our one year old is our little foodie-in-training.
She is currently crushing on:
- shrimp
- cherry tomatoes
- asian flavors
- and pasta (who isn’t?)
When we sit down for meals, I just take a scoop off of my plate (tastes better when it’s from mom or dad’s plate, obv) and put it on her ezpz. ← you need one of these in your life ASAP.
