Looking for some fresh, easy summer dinner ideas to change up your weekly meal rotation? Here are 7 fun ideas perfect for the whole family. If you missed Week 1, you can still check it out, here. 


Oh, hey there summertime. Is it July 4th already? Right about now I am feeling all.of.the.summer.cliches.

How did summer go by so quickly?

How is my baby already 1?!

How will I survive this Georgia heat?

As much as I like to complain about being too hot and/or summer flying by too quickly, I actually truly enjoy summer and all of the amazing foods that are in season right now. I think I actually wait all year just for that first bite of a fresh summer peach.

Week 2 of my One Month of Easy Dinners meal plan features some of summer’s best and also some of my favorites:

  • zucchini
  • fresh corn
  • avocado
  • ripe tomatoes

As well as some easy pantry staples like black beans and rice.

After last week’s post, I realized that I failed to mention that these dinner plans feed all 3 of us: Me, Eric and our one year old.

A reader messaged me to ask if I make our toddler a separate dinner, and the answer is: ain’t nobody got time for that. Our one year old is our little foodie-in-training.

She is currently crushing on:

  • shrimp
  • cherry tomatoes
  • asian flavors
  • and pasta (who isn’t?)

When we sit down for meals, I just take a scoop off of my plate (tastes better when it’s from mom or dad’s plate, obv) and put it on her ezpz. ← you need one of these in your life ASAP.
